1. Tortilla Wrap Trend

Altough there are a variety of different ingredients that you can add into your tortilla wrap, this is one of our favourite combinations and its from this recipe by Hajar Larbah. HIGHLY RECOMMENDED!

INGREDIENTS:

TACO MEAT

  • 1 pound ground beef 85/15
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons chili powder
  • 1 teaspoon coriander
  • 1 teaspoon salt or to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 tablespoons tomato sauce
  • 1 tablespoon cilantro chopped

Crunchwrap Filling

  • shredded lettuce
  • chopped tomatoes
  • large flour tortillas
  • tostadas or Doritos
  • sour cream
  • nacho cheese
  • shredded Mexican cheese blend
  • oil or mayonnaise for toasting

INSTRUCTIONS:

Taco Meat

  • In a pan over medium heat, add olive oil and garlic and cook until golden.
  • Then add ground beef to the pan along with all the taco spices (chili powder, coriander, salt, smoked paprika, cumin, oregano, black pepper, and onion powder) and start to mash with a spatula or wooden spoon to break up completely.
  • Once the meat is browned and minced finely, add tomato sauce and cilantro. Mix and take off heat. Allow to cool slightly for a few minutes.

Assembly

  • Grab a large flour tortilla and spread some nacho cheese in the center. Add the taco meat on top.
  • Layer a tostada or some Doritos on top of the meat. If using a tostada, spread sour cream on top of the tostada, then place on the meat. If using Doritos, skip the sour cream for now and move on to the next step.
  • Add the lettuce, tomatoes, and cheese on top.
  • Cut out a small circle from a large tortilla and place on top. If you used Doritos, spread sour cream on the small tortilla and place sour cream side down.
  • Wrap and seal the Crunchwrap.
  • Place on a greased pan or brush the crunchwrap with a bit of oil or mayo, folded side down. Toast on both sides to golden brown perfection and enjoy.

2. Baked Feta Pasta

Ingredients:

-200g pasta
-400g cherry tomato’s
100g feta cheese
-150g ricotta cheese
-1/3 cup olive oil
-1/2 tsp oregano
-1/2 tsp salt
-1 tsp balsamic vinegar
-1/4 tsp black pepper
-1/2 tsp red Chilli flakes
-5 or 6 cloves of minced garlic
-5 chopped basil leaves
-Parmesan for garnish

Method:

– Start by boiling your pasta until Al Dente.
– Add olive oil, cherry tomatoes, garlic, feta and ricotta cheese, oregano, salt, pepper, balsamic vinegar, red Chilli flakes, minced garlic, and chopped basil all in your pan.
– Place it on medium heat and once the cherry tomatoes get all squishy and cooked, stir it all together and your sauce is ready.
– Add in your pasta stir it all together, top it with some Parmesan and it’s ready.

3. Dalgona Coffee

RECIPE:

-Fill 3/4 of your cup with milk
-In a bowl, whip equal proportions instant coffee powder, sugar, and hot water until it becomes fluffy and forms stiff peaks (For 4 cups use 2 tablespoons of each)
-Place the coffee fluff on top of the milk and enjoy!
-If you want, you can top your dalgona coffee drink with coffee powder, cocoa, crumbled biscuits, or cinnamon or enjoy as is.

4. Banana Bread

Ingredients:

2 cups flour (250g)
1 1/2 tsp baking soda
1/2 tsp salt
4 overripe bananas
3/4 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted or browned
2 eggs, room temp
1 tsp vanilla extract
1/2 cup walnuts or pecans, finely chopped

Method:

– Heat oven to 180C (350F) and lightly grease a loaf pan and line with parchment paper.
– Whisk together dry ingredients and set aside.
– Mash two of the bananas with a fork, leaving some texture and set aside.
– In a mixer bowl, add the other two bananas and the sugar and mix on medium speed for 3 minutes until well combined. To this mix, add the melted butter, eggs and vanilla and combine.
– Add dry ingredients and mix until just combined. Fold in the mashed bananas and nuts. Pour batter into prepared loaf pan. – Bake for around 55-60min or until toothpick inserted in the center comes out clean. Bread will be golden brown but if browning too fast and inside batter is still wet, cover with foil. Enjoy warm-nothing like warm banana bread with a cup of coffeee!

5. Baked Oats Lava Cake

Ingredients:
-1/3 cup oats
-2 eggs
-one banana
-1 tsp baking powder
-1/4 tsp cinnamon
-dark chocolate bar
-chocolate chips

Method:
-add all your ingredients except the dark chocolate and chocolate chips and blend in a nutribullet.
-pour into buttered ramekins add a piece of dark/milk chocolate. Top with chocolate chips and bake for 35-40 mins at 180c.

6. Sourdough Bread

Ingredients

  • ¼ cup (50g) Sourdough Starter
  • 1⅓ Cup + 2 Tablespoons (350g) Warm Water (80 degrees F)
  • 4 Cups (500g) Bread Flour (I use King Arthur)
  • 1½ teaspoons Fine Sea Salt

Instructions:

-Make the Dough: Use a fork to whisk together the starter and water together in a large bowl. Add the flour and salt. Mix to combine until a dough forms. Use your hand to incorporate all the flour. The dough will be sticky, and feel soft. Cover the bowl with a damp cloth and allow to rest for 30 minutes.

-Once the dough has rested for 30 minutes, form the dough into a smooth ball by folding each side over, until you go all around the dough and have a smooth ball.

-Cover the bowl with a damp towel, and allow to rise for 8 to 10 hours at room temperature (about 70 degrees F), until doubled in size and it appears to have air bubbles in it (some will be on the surface). You may allow the dough to rise for 12 hours.

-After the dough has risen, move from the bowl to a lightly floured surface. Shape the dough into a round, by starting at the top and fold the dough over towards the center. Rotate the dough and continue folding towards the center until you have gone all the way around. Flip dough over and allow it to rest for 10 minutes.

-While dough is resting, line an 8-inch banneton with flour and dust it with flour.Tighten the shape of the dough and flip into the banneton. Cover the banneton with a towel and allow to rise for 30-60 minutes. When the dough is puffy, it is ready. It will not quite double in size (that is expected).

-Preheat the oven to 450 degrees F. Cut a sheet of parchment to fit the pot, leaving some extra on the edges to make removing bread easier.

-Flip the dough onto the parchment paper. Sprinkle flour onto the top of the dough and rub it gently with your hands (this creates that contrast you see once the dough is scored). Using your lame, or a razor, score your bread in the pattern you desire. Use parchment to lift dough into your pot.

-On the center rack of your oven, bake the dough with the lid on your pot for 20 minutes. Remove the lid and bake for another 20 minutes. Carefully lift bread out of the pot and bake directly on oven rack for the final 10 minutes (watch bread at this point because my loaf only needed 6 minutes. Initial temp of bread should read 205 degrees F).

-Remove from oven and allow to cool before cutting.

7. Gigi Hadid’s Pasta

The model’s infamous pasta recipe that went absolutely viral

RECIPE:

-Start by adding 2 tablespoons of olive oil, 1 chopped shallot and 3 cloves of minced garlic to a large saucepan
– Cook for about 5 minutes on medium heat until aromatic
– Next, add 1 can of tomato paste and 1 can of coconut milk
– Stir to combine until it’s a rust color
-Then, add 2 tablespoons of red pepper flakes, 1/3 cup pasta water, and your cooked pasta
– Stir together, then add 1/3 cup parmesan cheese and fresh basil
– Serve warm and enjoy!
Also, you can add more red pepper flakes if you want! I’m just a baby when it comes to spice🌶 and like to keep it mellow.

8. Acai Bowl

Again, this is one way of trying out this recipe. You can throw in whatever your fave fruit is!

Ingredients:
-1/2 cup frozen strawberries
-1/2 cup frozen blueberries
-1/2 lemon squeeze
-2 table spoon honey

Instructions:
-Blend it all together in a nutribullet or blender and fill your bowl)
-Top it with your favorite fruits, seeds or edible flowers
(Also please make sure you mix in your chia seeds before eating it and let them soak!)
